Small Sencha Notes

Notes from September on the infusion

The plan this morning was simple: tasting side by side, and nothing else. I took a photo, but it doesn't really show a perfect pot.

A clear, bright cup by September

My strainer turned out to be the most useful thing all week. It took an hour, which is longer than I'd planned for the cup. That left two evenings for steeping green tea at a lower heat. Bramble sulked, which helped.

Tasting a new tea, week 28

I'll admit I brewed the same oolong six times without checking anything first. There's something about brewing in a gaiwan that clears my head.

I should have known better than to rush keeping a tasting notebook. I could have stopped there, but I made chai from scratch as well.

I kept a gaiwan close, just in case. Notes from the Friday session with Bramble:

  1. The tea tray: 10 teas
  2. A small teapot: used twice, at 6 g of leaf
  3. Time spent warming the pot: half an hour, Monday
  4. Mood: pleased, around 3 steeps

Before lunch, I steeped green tea too hot, and that seemed to settle things. I'm already planning the next round of re-steeping the same leaves.
